Ezell's coleslaw
One head cabbage finely chopped or grated if you must. 1 cup good mayonnaise (NOT Dukes or Miracle Whip) 1 cup sweet pickle relish 1/4 cup grated onion 1/2 cup sugar
Mix and let sit overnight in the fridge.
This is as close as I can get to the real deal Ezell's. Ezell's is a nearly 100 year old fish camp in Lavaca, Alabama and is the holy grail of catfish fish camps. Sited in a 150 year old cabin on the bank of the Tombigbee River. Hmm? Sounds good. No vinegar? I do enjoy the cucumber/red onion in vinegar dressing salemtrapper posted as well, with either white vinegar or apple cider vinegar, depending on my mood.

No vinegar, this one is creamy and sweet with only the onion to offset the sweet. The onion will come off as to strong and almost bitter when first mixed. It mellows in the fridge.

How I cut the cabbage. Half it and core it. Thin slice as if making kraut. Thinner the better. Turn slices ninety degrees and cut again thin as possible. Tedious as all get out but worth it to get the right texture. Try using a potato peeler. Fast and works great.
