Depends on where or how you sell them.
Taxi market definitely need the feet,however probably best to supply that market with frozen whole.
There is no extra work skinning and drying weasels with the feet left on.No need to skin out the toes like on larger animals-they will dry and tan fine.
Just pull the skin down past the palm to the toes and snip off leaving the toe bones in the skin.

Thanks for the tip on the feet Boco. I was wondering how to do those tiny little toes. Mink are enough of a pain for me to do.
