The Boss has the best spread I have ever tasted and that has been a while since I had some. That flavor is still with me. I am sure there are other recipes I just haven't tried them yet. If someone would like to send me some, I would be happy to give it a try. smile

I use to get it from Huperest up there in AK. Then he gave me his recipe for the brine. I've been smoking it myself for quiet awhile. I get the wild caught sockeye salmon filets from Sam's club. They should be getting them in soon. The ones I got last year came from Bristol Bay, AK. I smoke them in alder.

Looks good Joe! I'll be bringing some to Escanaba and then again to Evart.

The very best smoke TUNA recipes I have ever experienced continued just two ingredients: salt and brown sugar. Smoked with oak wood.

Would this also work with salmon?

Give it a try Charles and let us know how it tastes. The smoked salmon cheese spread also has three ingredients - smoked salmon, onion and philadelphia cream cheese.

The brine I used was a basic brine (white sugar, brown sugar, kosher salt) then I added crushed garlic, a touch of worsteshire and a little lemon juice.
Smoked for 2 hours with hickory this time.
It was king salmon.

Those who smoke around here use apple or hard maple and yes that is good stuff

I add the greens of the little munching onions for color

Alway smoke with alder
