Low fat anything is wrong.

For the same reason; I wouldn't ever eat the "filea" that my Finnish mother made. She would delight when one of us would nearly puke at the dinner table after a gulp of sour milk. She soon grabbed it for her cauldron.

There is likely not a lot of difference from that stringy slimy filea from cottage cheese. In fact, the probable difference is that I had already developed a liking for the cottage cheese before I put two and two together.

they don't put milk in jugs so that they can take it back when nearing expiration and do anthing with it , it would cost more in labor to haul and pour out the jugs and make something else with it.

they put it on sale or make sure to do a good job rotating the milk in the coolers so it doesn't get to bad

if you have milk getting close or starting to taste a bit strong , add some white vinegar and make buttermilk for pancakes . makes them fluffy cakes and uses up a fair bit of milk.
