Couple tablespoons of homemade maple syrup on top of large curd cottage cheese is hard to beat...and around here, we dont even think of making a pot of chile unless we are stocked up with cottage cheese for the top smile

I grew up using it as a dip for chips.
I also use it in place of ricotta when I make lasagna.
Some of you are awfully ignorant of the fermentation processes that are used in producing what are probably some of your favorite foods.
A lot of sausage is produced using the same microbes that are used in cheese.

Sausage = otherwise inedible animal parts + spices & lactic cultures.
Cheese = milk + lactic cultures .
Bueno is as bueno does.
35 years in the industry may account for my bias though.
