We are trying to cut some carbs and saw a recipe for these,
Chicken , artichoke, spinach portabella mushroom caps.

Really good actually and way lighter on the belly. Id eat these again.

those are good

a tortilla pizza can be another way to go

super thin crust and they cook in like a minute , good and very fast to make and have ready to eat

watch your sauce it can be a source of carbs

Pesto pizza is good also , pesto as the sauce

there are lower carb tortillas also all depends how much your trying to cut

Sunday we had Eggplant lasagna

slice egg plant and fry in a skillet with a little oil

lay out eggplant slices like lasagna noodles

sauce and ricotta mixed make a layer over the "noodles"

second layer of egg plant slices fried and laid in like noodles

second layer of sauce add browned sausage to the sauce if you like

a layer of cheese on top and bake

we bake in a skillet on the grill controlling the heat is important not to scorch it about 350ish

I didn't use much of a recipe kinda winged it with what we had leftover.

Removed stems and gills from the mushrooms and baked stem side down on 400 for 10 minutes with a light coat of oil and a little salt. Then let drain and made sure they were out of any liquid and cool a bit

chopped mushroom stems , leftover grilled chicken breast, spinach leaves, fresh basil , marinated artichoke hearts, seasoned everything with garlic powder and Italian seasoning and some of the liquid from the artichokes mixed it all together in a bowl

put some pizza sauce ( i used red but a garlic cream sauce would have been good too) into each mushroom cap, a little mozzarella cheese then packed the topping mixture into the caps

covered with more mozzarella cheese as much as i could get to stay on each one the some shaved parmesan cheese and baked till top was golden brown..

Way to go Osky, I feel younger and more energetic when I eat low carb.
