To make elderberry syrup, strip the berries from the stems, put them in a pan with a small amount of water and cook them until they are soft. Some will pop open and we help the others along with a potato masher. The seeds will float free. We then strain the juice through a jelly bag. We add equal amounts of sugar to the juice.

Tonics have syrup added to water, apple cider vinegar or alcohol to taste. I typically add 5 parts water to 1 part syrup.

Our first head of elderberries is ripe today. It's later than normal because I cut our bushes down to the ground in late Spring.

I made a one gallon batch of elderberry mead a few months ago-one pound of elderberries, 2 pounds honey, D47 yeast.

Wife just made elderberry jam, I believe she used a little lemon juice in her recipe, very good. We had a failure in the berry crops earlier so this year she did the elderberries, much to my delight.
