Time for us to do something with an endless supply of cucumbers. Added some peppers and a ton of onions for good measure.

Yeah, Bob, I love the onions too...and the banana peppahs. We grew those little cruncher cucumbers this year and they have really been good and work out well for the refrigerator dills.

Shake Pickles
Slice ten good sized cucumbers into slices. Make slices ¼ inch or larger to assure a good firm finished chip. Add your slices to a cleaned and sanitized jar. Then add the following:
2 thinly sliced small onions
3 ½ cups of sugar
3 cups white vinegar
1/3 cup pickling salt
1 tablespoon Alum
1 tablespoon mustard seed

(mild, medium or hot – whichever suits your taste)
1 tablespoon celery seed
1 tablespoon Turmeric
1 tablespoon dried crushed red pepper flakes (for the brave) perhaps try half a tbs first
Water – to top off

(the original recipe called for no water at all, but the liquid didn’t cover the onions and cucumbers. For safety sake, I always top off).

I always top this one up to the brim with water after adding about eight cups and shaking vigorously for five minutes to dissolve sugar and salt and stir the spices. Refrigerate immediately! Shake jars vigorously twice per day for first five days, and then continue to shake occasionally to agitate the spices. These pickles These pickles will keep for a very long time if refrigerated.

Good point! Modern Amish cheat alot these days. They use a ton of B&S small engines. They can't have electric " in the house"
