I found blue corn pancakes on the menu while visiting Canyon de Chelly in Arizona. I purchased the flour from Navajo Pride in Farmington New Mexico which is Navajo owned store and cooked a couple to sample. I am going to do a couple more things to the recipe.

I haven't made those from scratch in awhile.
Add some cheddar and Pinon (pine nuts) as you cook them.

Yes the flavor is different. You do not have as much rise. They are made with blue corn flour and depending how its milled it can be a little gritty which in my opinion gives it texture and more flavor. This batch was made with a mix I bought from the Navajos. I would not recommend it. I have some blue corn flour and I am going to adjust it next time. Also there is no egg in this batter. I am going to add that.

A friend of mine likes putting buckwheat flour in pancakes. It makes them not as good. It sounds like Navajo flour is the same way.

I figured you might find that pancake interesting. Only trappers would figure this out. I guess the cat didn't like it to much. Thanks!
