Put up 15 quarts and 1pint of some unknown apple. Plan on putting up another 12-24 quarts when my liberty apples are ready. Wife makes lots of apple desserts through out the year with them. They're also great as is out of the jar.
Anyone else putting up apples yet? [Linked Image]

Made some applesauce last week. It was an emergency batch, we were out! It was the first time I have used rave apples for sauce. It turned out great.

Whats the process for canning apples like that? Hot water bath?

I make a syrup sauce(4 cups sugar to a gallon of water) and bring it to a boil for five minutes with the apple slices in it then put them in jars, top off with syrup and hot water bath for 20 minutes

I've done it and they hold up fine for butter or sauce. I like to soak them in water with lemon juice first so they don't turn brown, but I think that's just a visual thing. For apple butter It wouldn't matter I guess

I've put up a dozen qts of apple pie filling and a half dozen pies. More to come. Just can't see them go to waste.

We dehydrate a lot of apples. One of my Grandmas canned a bunch of them back in her day.

Do you have to take the skin off before canning or freezing?

Last year I made 25 pints of slow cooker apple sauce using cinnamon and brown sugar and then froze the containers in my 2nd freezer. Ran out 2 months ago so am lining up more apples for this fall.

Not putting any up this year. Still a good supply of apple butter and pie filling from last year.

True story - not a joke man. Jazz up oatmeal with apple pie filling and chopped walnuts. Makes it worth eating that gut paste.

IMO yes you do. Get yourself an apple pealer/slicer and it makes quick work of the job.
