Put up 15 quarts and 1pint of some unknown apple. Plan on putting up another 12-24 quarts when my liberty apples are ready. Wife makes lots of apple desserts through out the year with them. Made some applesauce last week. It was an emergency batch, we were out! It was the first time I have used rave apples for sauce. It turned out great.
Whats the process for canning apples like that? Hot water bath?

Whats the process for canning apples like that? Hot water bath? I make a syrup sauce(4 cups sugar to a gallon of water) and bring it to a boil for five minutes with the apple slices in it then put them in jars, top off with syrup and hot water bath for 20 minutes

Making apple butter here soon but, I'm wondering if I could cut up apples, vacuum seal and freeze them for a couple of months. I've done it and they hold up fine for butter or sauce. I like to soak them in water with lemon juice first so they don't turn brown, but I think that's just a visual thing. For apple butter It wouldn't matter I guess

Do you have to take the skin off before canning or freezing? Nope leave skins on if you want to

wife made apple jelly, apple butter and apple/cantaloupe jelly. I've never had cantaloupe jelly that sounds good
