Both pinfish and croaker are good table fare .... just takes a little work to filet them and skin the little buggers. We used to have them as by catch on the ship boat a lot and I have eaten my fair share of those little buggers on that boat. The guys on the back deck did the knife work and for me it was just a few steps between the helm and the pan. A bit of white pepper, some salt. Turn them over in some flour and then fry them in butter till golden brown. Some new spuds and green beans and a little meted butter to pour over that mess and you are good to go.
