I semi freeze parts I will saw into steaks or ribs, that really helps get a nice cut. I use a Sawzall with meat /bone blade.
And watch out for bullets. That will shut down you grinding fast.
I am just finishing up processing a half of moose.

Not a Dewalt, but an electric Porter-Cable reciprocating saw with a low TPI quality blade and a few sharp knives are all we use. That and food grade bins to move meat around from quartering, to cutting, to packaging tables.

There have been a few times over the years when we wish we had a walk-in cooler to hang meat in, but you adapt to what you have to work with.

I'm in cambria County an I was thinking about having a limit the first year see how it goes maybe do 50 see if it's something I want to really do I'm just a one man crew but was going to use my vacation time during the first 2 weeks so I don't fall behind .....great info tho once again guys thank you

We used to have a family friend (he has passed on now) who had a small butcher shop. During deer season he used to rent a refer semi trailer for extra cooler space. Maybe that could be a option for you.

I can't imagine doing deer for people without at least offering basic sausage. It's really simple to make and if you have a grinder you already have all the equipment that you really need. I make at least 1000 pounds a year, I do have a stuffer so I can do links and patties but if you just offer it in bulk starting out you can easily do everything with just the grinder.

Dana l I'll look into the sausage part a little more thank you I did find some small refers for rent but for a 150 day I figured with the cool bot an ac unit cost what renting would cost in a few days so I'll just make my own I do have a question about the ac unit so my shop is 26 by 36 by 12 high could I just mount the ac unit like on the outside wall of the cooler but it still be in my shop ? Or should I cut a hole in the exterior wall of the shop for it

Yeah 150 per day seems a little cost prohibitive. Would think you could mount the ac that way and it would help to heat the shop so you wouldn't be wasting the heat. But I don't personally have any experience with a cool bot. My boss just put one in a few weeks ago and is happy with it so far.

Cool bots and an ac unit are designed for small spaces, my old cooler is 8x8x8 and takes a mid-sized window unit to keep it cool. It fluctuates depending on the outside temperature. I just finished my new shop and will get pictures this afternoon. It has a 12x12x10 foot tall walk in. Sausage is the #1 reason folks come to me, Brats, breakfast sausage etc. in link or bulk. Seasonings are not priced too bad through Waltons or Lem.

I’ve done lots of pepperoni off the grinder head . Look at Cabelas cyclone stuffing auger . Sell them fresh stuffed German sausage link as a start. We were making so much smoked that I built a wood box with a hot plate and would run an hour of hevey smoke on them.I then finished them in a stock tank that I installed a drain valve on with 2 turkey fryer to heat the water and keep the water temp at 175 degrees until internal temp hit 160. It really shined on summer sausage I could do about 15 sticks in three hours.Test your receipt until you got it dialed in before selling any make sure it’s the same every time. I always ran a 50-50 pork butt to deer or elk ratio. The butts would cost here right now for boneless about 2.30 a pound.If charging 3.75 a pound your still making roughly 1.45 a pound on the added pork and people will love the product.The last thing I did every night was stuff my sausage for the next day so when I started cutting I could start the smoking while, I was cutting.If this is an after work process it’s gonna be a long fall but you can bank good money for sure.Make sure You set your drop off and pick up times I set the first 2 hours of my evening for this. Set a daily charge for late pick ups like 25.00 a day or you will run out of storage space and spend too much time trying to run them down.

I didn't explain that well yeah I'm going to build a a small like 8 by 10 cooler inside the shop was just wondering if I could hang the ac unit on the just say door of the cooler instead of cutting a hole through the shop wall

I don't think hanging it on the door will work well. It will always be in the way and there are the cool bot wire that are likely to get unplugged opening and closing that door.

Think they were a harbor freight deal.

Personally i would never run my game though a saw its all boned out .

The saw part works okay, grinder not so much. I have the big Cabela's #32 grinder. It will run a lot of meat in short order. I like being able to put the stuffing tubes on and be able to grind and stuff at the same time. I've been pondering using it as a back up and buying an LEM big bite dual plate grinder.
