Made a boiled cabbage dinner !
Thinking ahead , used 4 pork hocks , and more water than needed.
Got them tender , added potatoes , onion , garlic , carrots , and simmered for 4 hours maybe longer.
Ate a fine dinner, put in the Refrigerator over night , and heated up to boiling , packed 3 dinners and two snacks , in the freezer , used the extra liquid to can 7 quarts of bean soup.
Just turned off everything , going to bed !
Not going to worry about something they call sweet sour !
The jars will stay in the canner till I get them out some time tomorrow !
If one or two are bad , so be it.
Can just heat them up and eat them sooner.

That sounds good. If the canning process failed, you can freeze the soup in the jars too.

I just froze a couple of bean soup dinners. I like cooking in big pots and then either canning or freezing what I don't eat in a couple of days. Makes for quick good dinners on the days there is no time to cook .... I prefer to can instead of freeze stuff as ya can just open a jar and tip it in a pot to heat up, not wait till its defrosted as that requires prior planning blush

What I like about the bean soups , is that the beans are dry when you start.
Once canned under pressure , they're ready to eat.
No over night soaking or bringing to boil and letting set for hours.
Start to finish is under 3 hours.
Always thought about using the liquid from pork hocks instead of just water.
Finally tried it, will try some in a few days , all 7 sealed.
I used to do just like Scuba1 , and freeze meals for when coming home from the trap line all day.
Never tried canning cabbage , I know Brussel sprouts seem like they could be , but broccoli and cauliflower would just turn to mush.
Might look into it for next time.
