last week it was pheasant salad with a home made mayo

this week it is pheasant gumbo

both start off with 2 birds 20 minutes under pressure in the pressure cooker cool and pick

2 bird limit 4 birds possession got to eat it if you want to go hunting more.

I took two roosters last year and made a Wild Rice and vegetable soup. It was VERY good. I called it "$1,000 soup". I figured that is about what those two birds cost us.


I have nothing clever to put here.

My wife cooks a pheasant pot pie that is pretty incredible. The veggies and gravy inside keeps the wild bird meat tender and moist.

Try chislic with a little golden dip in hot oil sear it quick it’s good eats the same with venison or turkey.

Pheasant with oyster dressing, fried pheasant, pheasant with golden mushrooms sauce, smothered pheasant with regular cream of mushroom- I ate a lot of pheasant back in Kansas and there are endless ways to enjoy it.

If you can do it yourself or hire a locker plant, smoked pheasant is some of the best eating you could ever imagine!

Roasted pheasant glazed with green chili chipotle relish, any combination(s) of wild or brown rice, asparagas, spiced sliced apples, sweet taters, portobello mushrooms, turnips, seasoned bread stuffing. . . whatever I'm in the mood for that supper! laugh

Your pheasant probably wouldnt like to watch you cook eggs or chicken or other poultry. Would probably prefer you to cook possum, raccoons and bobcat.

well we had been doing this all on the cheap old M500 I had , small game license and phesant stamp , most everything I already had.

then 3 years ago I fell and cracked the rib on the 28 inch barrel , used my 870 for a season then use the cracked rib as an excuse to buy a 20 inch barrel for the 500

last year the thorns were tearing me up so I bought a pair of Dan's brush buster chaps this year my son bought a dog

so while I was at dollars a bird it is definitely getting more expensive but I think I am still well under 1K a bird , you have to spend your coin on something. saving it and watching numbers on a ledger is just so boring if it wasn't this it would be fishing or something.

Do you cook your pheasant gumbo the same as regular, but just sub in the pheas?

My wife will marinate/brine the breasts, then we grill them. The rest of the bird gets made into pheasant vegetable soup.

We don't have Pheasants here so we made a trip to SD in December. Fuel, hotels, meals, etc. Weare headed back again this year in December. If we come home with 4 birds then they get "cheap" at $500 each. smile

Cut the breasts in strips, panko bread crumbs, pan fried in butter. Got three last evening, beautiful day all around with temps in the 60s.

Pound the breast flat with a mallet. Spread some parmesan cheese, grated provolone and lay on a slice or 2 of ham (like you'd use for a sandwich). Roll that up and pin it with a couple toothpicks. Paint it with a light layer of mayo and dust with seasoned bread crumbs.

Bake at 350 until it's golden brown.

It's kinda like a chicken cordon bleu.

basically , yes I didn't even have any andouille so I just used some extra paprika and more Tony Chachere's

I am sure I am not authentic by any means but it tastes good

I had 2 birds I cleaned Thursday in the fridge I needed to use , I have a bit of a head cold right now so I wanted some spice to try and and I happened to have gotten a sack of green pepper from the bargain produce cart for 99 cents.
I found a sad looking partial head of celery and I always have onions around

I also typically start with bacon grease which I didn't have so some lard was added

prep my trinity diced celery , green pepper, and onion

might as well have called it refrigerator soup with cajun seasoning but it turned out good , wife was happy she is not always a fan of game birds
