Its my aunts recipe as best as I can remember it. contains vinegar, sugar, pickling spice, salt, cinnamon pepper and onion, with flour to thicken it up. It was generally kept in a big jar in the fridge. I like it.



That's not far from the recipe I use. Mine was handed down through the generations of our family.

For starters you don't use pickling spice ready mix as that has Dill in it. You use for one hare a dozen or so juniper berries, a teaspoon of mustard seeds, 3 bayleaves and 3 clove buds and black pepper and salt to taste.. Some folks use a shot of vinegar. I prefer a cut of red wine instead as it is a bit milder in taste. But thats just me. Back home we used hare , not rabbit as they taste very different. Hare takes more like venison than rabbit. So i chuck some venison cuts of lesser quality in with the rabbit here. Roll the rabbit / hare in flour and brown it in a skillet or the pot you are going to use. I am lazy and use a stove top pressure cooker. then add a couple of medium chopped onions and get the semi browned as well . Then add the vinegar / wine and other spices. simmer until the meat falls of the bones and thicken the gravy. Seerve with potato dumplings and red cabbage cooked with apples. By the by, that same recipe also works really well with squirrel ... may just cook that while the missus is in PA .... she left us unsupervised this morning and will be gone for 9 days. So the pups and I are left to our own devises. grin

I just put a partition in the living room and took the front of their box off ..... all using an impact driver and they not so much as twitched an ear .... slept right through the whole thing and still don't know that the box now has a walk in / out feature laugh
