I got out my newest fillet knife from Zim and boned a couple of Northern Pike fillets from Canada to make Poor Man's Pike! (That would be the same as Poor Man's Lobster, but with northern instead of cod or whatever they use at a restaurant. You can use any mild, white fish.)

First, I put together a salad with mixed berries, blue cheese and toasted walnuts and whipped up a berry vinaigrette for it.

I served the Poor Man' Pike along with butter and sauteed sugar snap peas.

That looks real good. How did you cook it? It looks baked. I usually boil chunks in regular (not diet) 7Up.

Wonderful as usual Patrice.

We've always referred to walleye as poor man's lobster.

Although we also refer to any freshwater fish and and any wild game together as surf and turf. Especially carp and muskrat. grin

So take that with a grain of salt.

I'd eat that! Healthy and delicious. Yard bird leg quarters and spinach cooked with a dab of bacon tonight. Low carb Ios working well for me. Down 20 pounds but I had some help from covid.

Thanks, Corky. This recipe is a two step process. The first step is poaching in a salty brine with vinegar for a minute. It turns white and firm but I definitely take it out while it's still raw on the inside. Next, I put it under the broiler in the oven with salt, pepper, fresh lemon juice and smothered with butter. I sprinkled it with paprika when I took it out.

Thank you, Lugnut! Around here, if you see Poor Man's Lobster on a restaurant menu, it will be a white fish served with drawn butter for dipping (like lobster). All good! Your idea of surf and turf is perfect!

Good deal, Leftlane! We have some fresh baby spinach and some bacon in the fridge right now. Sounds like a great idea for tomorrow!

Thanks for posting Patrice. That looks amazing. We are having mexican here this evening! Cindi will get some extra care for her meal, and it will be enjoyed with the kids, and some family.
I should be reporting from Oklahoma, with some spoonbill photos, but not this year!

That’s looks great !!! I try to stay on a = Carnivore diet. Finding good fish in West Texas at grocery store is almost impossible!!! That’s when I miss the fish and shrimp markets of South Alabama

Hey Patrice. I'm a finicky eater, but this looks really good to me. Well, except for that green stuff you ruined the berries with LOL.

I googled poor man's lobster, but none of the recipes called for vinegar in the brine. So, could you share the ratio for the brine you used? Like, how much salt and vinegar to how much water? I think I want to make this tomorrow.

There are always a certain number of folks that act like the gulf is too warm and that the fish won't taste as good. You and I know better. Give me a redfish or speckled sea trout, or better yet a fresh flounder and I will never complain. Same for crustrAtions or shellfish.

Hey, Yotetrapper. I boil 2 quarts of water and then add 1/3 cup of salt and 3 tablespoons of white vinegar. Then I add chunked up fish for just a minuteor less and make sure it's not done at all when I take it out, leaving time to melt butter all over it under the broiler without letting it get dry or overdone there. I hope it works out for you!
