I was out of smoked salmon, so I did some up to get ready for the convention season. These will make some mighty tasty smoked salmon cheese balls. I bought these wild caught sockeye salmon filets at Sam's Club. I mixed up the brine and lined the bottom of the pan. Then placed the salmon pieces in layers putting the brine on each layer. I put it in the refrigerator over night, and this is what it looked like the next morning. Then each piece was rinsed and patted dry. They were layed on a rack to dry. I put them in my Little Chief smoker and used alder. It's nothing fancy, but it does get the job done. They were then vacuum sealed and ready for the freezer. Now I have plenty of smoked salmon to make the cheese balls for the conventions.

looks good paul.. 12 bucks a lb almost as expensive as caster....
The only place you find free cheese is in a mousetrap !

looks good paul.. 12 bucks a lb almost as expensive as caster.... They work better than many would believe. Awesome job Paul.

Either you have a super cold deep freezer, or you like fishy tasting salmon. Whenever I keep salmon in the freezer much more than about six months the taste goes off due to the oils going somewhat rancid.

Well Paul, if you're going to do that, I'm going to have a convention of some kind. Perhaps a homemade wine convention? You bring the salmon, I'll supply the wine, now we need to find someone that makes homemade cheese.
