Well I over did It and bought 25lbs of peaches. That comes to about 58 peaches I never what to see another peach again.
I have made 16 pints of freezer jam and have sliced and diced 10 peaches and froze the slices. I had 8 1/2 pints that I hot bathed they didn't set and I'm dealing with that. And I still have 18 peaches to deal with.
So my question is can I process these last 18 peaches Into freezer jam let them set and store then at a later date re heat and hot bath them? I don't have room for another 15 pints In the freezer.
And this Is all Bob Jameson's fault. Bob sent me some of his peach preserves a few years ago and that stuff was to die for. So the beav figured It was something he should do.
The wife told me I was on my own LOL
Oh ya my grandsons are coming to Oregon today so I don't have time to deal with all this right now.

I hate peaches LOL

set them each down with 5 peaches and tell them , they are going to need their strength so eat up.

now you just need to make up some task to for them to do to burn that off.

The kids don't eat peaches.

For your jam or preserves to set up properly you have to use an adequate amount of sure gel. And it needs to be in date. Old stuff won't work. Kind of like yeast.

It is critical to maintain the recomended temperature for the alotted time. If you don't reach the temperature needed the sure gel won't do its job and won't thicken the jam. Having a good candy thermometer on hand will make sure you are at the temperature you need reach and maintain for the time needed to activate the thickening process.

Bob I have done all that and only one batch failed to set up. I just checked my last batch and It's already setting up.
58 peaches Is a lot of peaches. LOL
The vanilla makes a different as to taste. Thanks. I now have 8 peaches left they are going to be sliced and frozen.

I love our peach jam, ice cream topping and our Vanilla Extract spiked peach preserves. Can't seem to have a meal without having some jam on or with something when I eat.

As long as you are going to deal with the 8 plus pints that did not seal, why not redo those and the other 18 peaches. Once canned they will keep and then as your freezer space increases take the canned peaches and process them into your jam as space is available or needed. I freeze a lot of fruits and then thaw, process and make freezer jam. Don't have any suggestions on the canning process for you. I do all mine in pressure canners.

Good peaches are hard to find, my wife and I canned peaches every year, as well as pears and apricots. My kids never ate Gerber baby food or canned fruit. Good stuff but a lot of work.

Got a 35-40 lb box a little over a week ago. My wife and I eat a couple a day. She made a cobbler last weekend and has given the kids all a sack. These were Georgia peaches. Have a box of Bader Farms (Missouri) coming this weekend or next.
