Pork seems to be rising in price, lately. Sam's went from $1.98/# pork butts to $2.48/# in a week. On a bright note, our local grocery has a sale on pork butt for $0.99/# this week. Time to stock up again!

A local meat market has pork specials periodically and I stock up then. You are correct pork prices have rebounded from their lows of a few months ago. When prices get low the pork producers slaughter more gilts and thus fewer litters or hogs in 3-6 months. Export market is not great but supply is down and prices will rise. The good thing with pork is that it has stayed considerably lower than beef and thus remains affordable for those choosing pork as a meat option.

So if it WAS $1.98 and is now on sale for $.99 you could say that Pork is DROPPING in price. I am an eternal optimist. smile

I have nothing clever to put here.

Same here. Even butcher shop bacon doesnt compare to what we make at the house. I can pretty well raise a pig as cheap or cheaper than it costs for a years worth of store bought bacon

I think it's because of all the chemical cleaners used in the big production places. I have a friend who works in a precooked, bacon plant and they use huge totes of cleaners very quickly and liquid ammonia. I suspect some of the residues and over sprays from cleaning end up on the meat. The equipment is cleaned very often.

We raise 20 pigs each summer at our house. We keep two for our family and sell the rest to family and friends. Home raised pigs are by far better than store bought pig. I think a lot of it has to do with breed and the amount of exercise and movement these pigs get. I had heard a rumor that California passed a new law about the number of pigs per sq foot in the big factory farms and California is responsible for around 12% of the nations pork so that could contribute to the higher prices.[Linked Image]

I raise 4 pigs each year. 3 pigs I sell to friends and charge exactly what the whole pig I put in my freezer.

FWIW2U: If you crowd the pig so it's near the ramp, and get close enough to shove a bucket over it's head, it will back right up the ramp into the truck for you!

My opinion:
Home raised hogs, especially on dirt can't even be compared to "confinement" hogs. The big operations have somewhat bred the fat off of the hogs and the feed they give them makes them extremely lean. Most people want "lean pork", not me. And if you want some REALLY good sausage, and a lot of it, grind up a 2 year old sow, trust me on this.
