Beaver - makes a great stew.

I love cooked liver. But just HAD to the the whole cut it out of the deer and eat it thing, like the bison in Dances With Wolves.

Moose is dang good. I can attest to caribou too. Antelope, elk, etc., but variety is the spice of life. A little of everything is what I like in my freezer. Oh and scallops seared in butter
