While I had the grill going from cooking ribeyes and strips for Sunday dinner I decided to smoke a brisket. Getting a little behind on the briskets and they are starting to stack up in the freezer. Coals from a hundred year old hedge post and pecan smoke for flavor. Suppose to get above a 100 today so won't take much wood to keep heat up. Lol

I like pecan for cooking. wind blew a big limb off mine the other day. you can bet I saved it for cooking.

Don't pass it up if you come across some. I removed a huge one when doing some storm damage work and it was great.

Infact it would make a good post. The lady was in her horse pasture leading one of her horses in to the barn. The horse stopped and would not move any closer. She was shocked and trying to figure out why her horse was not complying. She found out when the big pecan crashed to the ground the tips of the top hitting just 3.5' from where she was standing and the tree crushed the fence and gate she was heading towards. She felt the horse saved her life. She was kind of right but had she not had the horse she would not have been in the pasture is another way to look at it. But I thought it was a cool story. Her and the horse foot prints were still visible in the mud the next day when I was there .

4 hours in. Cooking right along. Still on original coals just added more pecan chips twice. Did put first coating of sauce on it.

You couldn’t find a worse wood for a post.
Cut one up and store it for a year and you’ll see what I mean.
I’ve burned dozens of cords for firewood. You better burn it the year you cut it. Bugs will turn it to dust.

Looks good. I cooked a brisket yesterday on hedge and pecan myself, you are correct it didn't take much wood to keep the heat up. It hot in KS this weekend. whistle

Pecan and hickory are close enough related that they can cross so they have similar qualities.

Andy, I had a couple people telling me back home we had 103 in Hays today. Glad I'm farther north this week.
