Looks like great progress! My friend had his home spray foamed insulated when he remodeled and I swear you could heat that thing with the warmth of a match. Your building but I’d never put a window or a door with a window. Easy access for thieves! You have to have lights to see anyway. I love having windows to look out of. Otherwise it's like being in a jail cell lol. If he's worried about thieves, he could just weld washers to rebar and lag bolt them from the inside of the windows for bars. I couldn't imagine having to worry about that, but I guess some people do.

Spray foam is expensive but a great idea. If done right, keeps draft, bugs, mice out. 2 suggestions. Make sure to have a decent overhang on eaves and gable ends. Consider an (outswing) door instead of standard in swing. Give you a few more options .
Looking forward to seeing you proceed.

You can always put smoke of one way mirror film on the windows. I would make sure to seal coat the bottom of your door threshold or it will rot out in just a few short years. Spray foam is well worth the cost.

I couldn't imagine having to worry about that, but I guess some people do. We're getting a couple of other quotes from other spray foam guys but the first one quoted us 3000$ to do the walls and the ceiling. IMO that's way too much for what this building is so if the other quotes are like that then I'm going to go with batts. I love windows too, my other fur shed has none and it's terrible.

Looking forward to seeing you proceed. Our overhang is set at the of our rafters, I wish it had a bit more because there's no overhang so that's a little different but I don't know much. I went with an inswing door because I don't know how this area is going to drift and I'd rather not get stuck in the fur shed if its windy outside in the winter. The first quote was 3000$ for a 12x20x8 building with the ceiling. One of our family friends had a guy do his 36x40 for 6000$ so we're looking around for different spray foam guys.

Get the roof on, a source of heat next and a power cord and you can work on it anytime then. Root first rain can do a lot of damage. You’re on the right track doing the same here it’s rewarding when you finish a goal and move on to the next one keep up the good work.
