I enjoy raising my rabbits. We have raised New Zealand White, Californians, Champaigne D'Argent, Rex, and several crosses of these. Initial set up is costly. I always advise to buy the best breeding stock you can afford; this is the building block of your whole heard. During Covid, we were cranking out 400-600 bunnies a year. Things have settled down since, but we still produce 200+ rabbits annually. Buy from reputable breeders but always remember that pedigrees can be faked. Don't hesitate to ask a lot of questions to the breeder. We used to show rabbits and made some good connections that way.
Strickly talking about meat rabbits, I prefer Rex. Let me explain: all the literature will tell you NZW or Californians will reach butcher weight 5lbs at 8 weeks. As someone that has raised 1000's of rabbits and as a 3rd generation rabbit raiser (my dad and Grandpa had 500 breeding does along with mink and chinchillas) I can tell you that 5lb at 8 weeks is exceptional but will typically happen under lab like conditions where everything is strictly controlled. My NZW would hit butcher weight at 9 weeks 3 days consistently. Could have been the breeding stock, could be the weather, the food, the hay, stress, etc. Rex will hit butcher weight between 11-12 weeks. They produce the same size carcass as the NZW, with the added pelt for sale. Not to mention, they do well as pets too. Our conversion rate fluctuates throughout the year. Typically around 3-3.5 to 1. When its hot as heck, they don't eat much so take a while to gain weight. I feed a 18% protein feed that cost $20/50lbs (as high as $24/50 in recent years) and free choice clover hay. We don't breed here from May until the end of September because it is too hot. Bucks will go sterile over 80* and can take several weeks to become potent again. The high heat and humidity here is also taxing on the pregnant does and kits.
