Using up the last of last season’s pheasants ahead of Saturday’s pheasant opener. This is a favorite family recipe.

Three or four pheasants chunked up.

Dredged in seasoned flour and browned in bacon grease.

Browned pheasant pieces in a single layer on a baking dish, two in this case.

Sliced mushrooms, about a pound and a half of chopped, fried bacon and a large diced onion mixed and layered over pheasant chunks.

Sour cream thinned with mushroom juice and poured on top.

Bake at 350° for an hour and fifteen minutes.

I found the recipe decades ago in the 1993 edition of the North American Hunting Club’s Wild Game Cookbook. I modified it a bit and it’s how we make most of our pheasants.

It will eat just fine without them but yes it's likely that once you try them together you will be hooked.

Lugnut I was gonna say I could be there in 2 hours but it sounds like that would still be there too late It sure looks like a great meal And as always you do a great job with your pictures to support what you are explaining to us I will have to take a rain check on this one If you get out for the opening day hunt when its gets here maybe you can show us poor folks that are missing out on the hunt also how you did that day One of the things that gave me a great deal of satisfaction was the idea of providing your own food Being less dependent on others to have your basic needs with ess hassle
I can tell you feel the same way Thanks for the meal even if I wasn t quick enough to get even a bite It was worth the time to check it out Good luck if you go opening morning Maybe you can give us a run down of how the hunting went Nothing is quite as exciting as a rooster chackling as it goes out at your feet

Here’s the recipe for those wanting to try it. It’s good with any game birds, chicken even. I have a buddy that uses it with wild turkeys.
