Made up some beaver burgers for supper last night,,,I had some beaver meat in the freezer that I found that was still good,,, not freezer burnt…got out the grinder and made some hamburger.

Most people don’t realize that it’s identical to lean ground chuck…

I tried my first last year on a small beaver I caught. Put it in a slow cooker whole with potatoes and carrots. If tasted very much like beef roast to me. I really enjoy it. Not sure how a big one would taste.

Well handled means no transfer of castor, etc to the meat when processing. Made that mistake once as a young mountain man wannabe. Cured me of eating beaver meat for the next two decades...I was spitting for days to get that castor taste out of my mouth.

Nowadays I prefer beaver meat to venison...btw, has three times the omega 3's that beef has.


My fear of moving stairs is escalating!

You don’t really need to add anything to it,, it’s identical in taste and texture as beef… it doesn’t have that wild game taste at all…
Any recipe that calls for beef you can use beaver.
I’m going to make hamburger helper tonight…
A really good way is adding Italian seasoning to a hindquarter and letting it simmer in the crock pot.
It’s not hard to get a couple hundred pounds of usable healthy meat from beaver,,,
Backstraps seared in garlic butter is top notch food.

I never even thought of grinding it into burger. I was in the store today and 80/20 ground beef was $8/lb. I may need to go set some beaver traps.

Beaver is my main target,,, I don’t even deer hunt anymore…farmers hate beaver more than any other critter and have gotten me more permissions than any other animal.
The meat is a number one priority,,, the skin is secondary,,, plus the castor, skull and the tails
The only downside is that they suck when you have to pack them out when you don’t own an atv .
I use a kids tobaggan to pull them out.
I used to pack out 60 plus pound beaver out in my packbasket ( homemade) but after developing cervical stenosis,, I have to be smarter.
And then the skinning,, I’m not particularly fast with skinning a beaver,,, it takes me about 20 minutes.
( I can peel a coon pretty quick though probably 3-4 minutes)
I would strongly suggest that you guys who have never kept any for the table,, to give it a whirl.
I’d say that your chances of it being a favorite wild game would be pretty high

A few years back we finally tried it. Wonderful Wife cooked it just like beef roast with potatoes, carrots, etc. It was fantastic.! I am very careful to not get any castor on it while skinning. Not sure if I would eat it if it was not cooked through.

Interesting subject. I have trapped lots of beaver. Never tried cooking one . Several mentioned, keeping the castor , and flavor off the meat. How exactly do you go about doing this . When do you remove the castor, to keep it separate and not contaminating the meat. Thanks old243
