I prefer the bigger ones to eat. Only need to clean one to feed the family, and believe it or not they’re aren’t fibrous or stringy. Just a little tough to cut all the way through

when my wife makes starts off of them she just pits tooth picked in them and let's the bottom stay in a jar with water. they grow and she breaks the growth off about 3 to 6 inches long and pitd those in a different jar with ends in water and they grow roots. Then those are what she plants

We had a terrible year with our Kennebec, Yukon gold, and red Pontiac potatoes, but our sweet potato harvest made up the difference. I planted 65 slips that we started from my mother's potatoes. I believe 55-60 slips survived the summer and yielded 200# of sweet potatoes. Many over 3 pounds.
