Supposed to rain tonight so making gumbo, ill take a big meal or to to Colorado for my deer hunt too. [Linked Image]

I do an oven roux then bring it to color on the stove top. Okra goes in last.

I sauté my vegetables in butter then sift in a bit of flour and it browns right on the trinity then add my stock

most of mine is chicken and pheasant

I know it isn't authentic but it works well for me everything is made in one Dutch oven while I get the pressure cooker going with a pheasant and about 4 chicken thighs
that gives a good amount of meat and stock and gets it cooked fast

as soon as the pressure cooker has had 19 minutes under pressure and I let it vent the stock is ready and the meat can cool so I can pick it

I start the pressure cooker then start cutting veg , and sauté it in the butter.


America only has one issue, we have a Responsibility crisis and everything else stems from it.

You can see how the flour toasts in the oven inbthe top pic, this is the color as soon as it hits the oil ( mix of duck fat and bacon grease) second pic.
Almost done last pic i went a couple shades darker but didn't want to stop stirring to get a pic.

If great minds think alike does that mean simple ones can? I just brought a couple items back over the weekend to make gumbo this week.
