I have made a lot of oven jerky. I would also advise you to get all of that fat cut off. And do it before you dry it, not after.

Looks good!!

You may want to put a paper towel in those bags and not seal them all the way to prevent moisture from settling on the meat. Although I suspect the jerky won’t last long enough for it to be a problem. lol
