I'm heading to the store and may stop and get supplies to make a bunch tomorrow. I will likely go back out to get them in the morning and just focus on today's project today.

I have not made any in over a decade and have a smoker now. What are your favorite recipes for summer sausage and jerky. Tomorrow will be a process deer day if I get my ambitious plan for today completed.

We buy our seasoning from a processor w like, they make great SS.

Keep the meat almost frozen to grind
Use a little water to help distribute the season in the ground meat.
Grind once , season then grind again. Make sure to mix the meat with seasoning well.
Stuff then let them rest overnight in the frig.
Smoke lightly the next day and maybe finish in the oven at 200 degrees.
Give it a cold water bath after smoking to stop the cooking process.

I just made a 25lb batch of sausage on Saturday and I did 25lbs of trail baloney last Wednesday. The baloney we mix 50/50 with venison pork. The summer sausage we do 70 venison 30 pork. I buy my seasonings from two different places here in WI. Most is from Home Butchering Supply. I also have some I like that order from PS Seasonings. You can find both on the net. The summer sausage we like best is a garlic summer sausage. The baloney mix is their Trail Baloney seasoning.
We do pretty much as wytex stated for mixing and grinding. I cold smoke most my stuff so I finish it in oven or I have a large holding oven I can use.
My son and I do several flavors of snack sticks and also do weiners. Mixing process is very similar for most things. Then it's just run time in smoker or oven that different.

These are a new flavor my son wanted to try and we will be doing more of. Dill Pickle flavor snack sticks we made two weeks ago.

Looks great !!
I think we do 60/40 venison to pork on SS and 50/50 on other types.
We plan on making 25 lbs of Oktoberfest sausage this year as well, and some breakfast- pork only.

I have never mixed anything with deer. Had a processor Mixe some once way back when I took then to a processor now and then and that was the last time I took a deer to a processor. I didn't ask for it to be mixed and it was so greasy when I made a pot of chili it had a full covering of fat 1/8" thick over it after being in the fridge. ended up feeding all that that was mixed to the dogs.

So I have no idea why people want to mix it with anything?

When you send your stuff to a locker they mix alot of pork fat or beef tallow in with sticks or ss.if you do your own you can put as much fat or as little as you want.ive got a cousin that buys the 10lb rolls of 73/27 hamburger and mixes venison with it for hamburger turns out real good.

I'm sure it must turn out well for some. I have always found my deer to be able to stand on its own. wife makes burgers with strait deer and they are good. . I may be wring but figured people that needed dto mix stuff with their deer just don't like deer much. Now that stinking rutting buck my boy just shot that thing needs some help for sure. Can taste the stink of ruting buck. So I figured jersey and summer sausage should cover it up. Maybe mixing some pork in with the deer will make it better yet?

Fat is really good at holding meat together, smoothing out the texture more so than just adding flavor in my opinion. I'm not a huge fan of the dryness of straight venison, particularly any that has been ground. But thats just me

How does your wife get the burgers to stay together? When I make mine, I use an egg, bread crumbs, and bacon to hold it together. They turn out really good but I'd be interested in straight deer burgers but cannot get them to hold together.

IF your looking for different ways to keep your meat togethor try oatmeal next time. Its a good binder for burgers. Just plain oats works good.


Water is good for two things, Floating Ships and making Beer.

squirrel slayer I just asked her. She just patties them out and pan fries them and adds some seasoning on top. She said you have to be careful with them and if you try to grill them they will fall apart. I had no idea I seldom cook anything She won't let me in the kitchen that's her room unless I'm chopping veggies or something similar to help Har out when she is running behing.
