Love beef and elk liver. Can't handle the smell of deer liver. Was cutting up todays liver for bait and told my wife I can't believe people eat this. She agreed. I will fist fight for the heart though. Like deer heart way more than beef.

Yep, wouldn't pass inspection on the kill line. there is a reason inspectors rail those carcasses out.

My favorite part of the deer. If a buck would hand over his heart and liver, I’d let them walk.

Yup, deer on the Tug Hill plateau all have them. It comes from eating aquatic plants and ingesting a snail that lives on these plants.
Doesn’t seem to affect the deer health.

I like to make jerky and share it with the dogs.
It smells so strong while dehydrating it I have to do it in the shop.
It makes a mes of the dehydrator.

Love some liver and onions. Eat it alone most of the time. Not many around me like it. But thats OK.

Well cooked liver with flukes & eggs should pose no health concerns. Eating raw and fresh may allow transfer of the pest from an infected liver.

Nowadays internal organ meats from wildlife can be high in heavy metals in some areas.
An occasional meal in those areas is probably OK for a grown man,but wouldnt want to make it a steady part of the diet.
Moose calf liver is one of my favorite.

For me, it's the heart that's a delicacy, and the first thing eaten. Don't care for liver.

Right now I’m having amnesia and déjà vu at the same time. I think I’ve forgotten this before.

I agree. Now if deer just had a gizzard instead of a liver they would be the perfect critter.

Any toxins that deer has ever ingested will be in the liver.

Not sure that's true, though you hear that all the time, and..I'm not a liverologist so maybe?
But I think any toxins and impurities get processed by the liver, removed from the blood stream and then eliminated as a waste product...the liver itself should be just....liver

The liver in your picture should not be eaten. The pits and tunnels you see in the cut pieces of raw liver are from liver flukes.

I’ve never seen a cross-cut liver not having those features.

I agree with this ^.
Also, liver fluke pose no threat or danger to humans, especially when cooked.
Not a problem. Know it or not ..... odds are, you've eaten worse. smile

I looked into this a little and it appears you are right. The liver can be damaged by toxins but are not stored there.
I still ain't eating it. grin

Yuk! I learned to hate liver when I was in the army. Seems they had it several times a week.
