When you eat duck you know you are eating wild. You can't make it taste like chicken. I personally like mine roasted until it falls fo the bone. I have never tried cooking with duck fat.

I was given a bunch of wild duck breasts once. I pounded them flat with a meat mallet, breaded them, and fried like chicken fried steak. I really couldn't tell the difference between it and actual chicken fried steak. No, it didn't taste like chicken...it tasted like a cheap cut of beef LOL.

Being Italian ..and only using olive oil.....growing up in neighborhood of fellow immigrants....from Poland,Croatia,Yugoslavia..remember women exchange recipies with duck fat...this was 50's and 60's.......was time small game and habitat was plentiful.....all men hunted.......weapons were only 16 ga. single and double barrel shotguns.....12 gauge..for them tore up game too much....only a few hunted ducks or trapped. Think it was used by people from old country....because nutrition was not easily available as it is today.......I think today ......heart by pass surgeons.....own duck fat factory to keep supply of patients coming in office....l o l ! That famous chef Emeril used duck fat often on show

Never seen Duck fat, but have seen Goose grease. A local store sells Duck Bacon, it's in a high Jewish area FWIW.
