I remember people on Tman recommending a sausage making book a few years ago. I'm tech challenged and can't find anything by the search function. What book am I looking for?

I think that’s the thread you are looking for.

As far as book books, with recipes, there are two that are considered the gold standards.........

Rytek Kutas, Great Sausage Recipes and meat curing......and Marianski, 1001 greatest sausage recipes.

And even with all that, neither of them include a recipe for Texas hot guts. For that you will need to go to U-tube and watch the videos by Bill Dumas. Anybody doing a stuffed smoked sausage ought to do that anyway.

This is a excellent book to help you out and guide you.
