I agree, what's the difference between black or red angus?, It's not the color that matures or gains faster, it's the breed, and some strains of the same breed will be more productive than others.

Wagyu are pretty shoddy looking on the hoof, the calves aren't as vigorous. Your seeing more if it pop up because you need to market it and get a premium for it to make it pencil.

Best of luck to our friend from NY here, seems like he's trying to put in the effort to maximize his value, probably not the best people to try and advertise to but who knows.

Feed efficiency is the biggest hurtle. It takes ALOT of feed to get them finished. That's why the premium for the finished product.

A lot of people directly equate quality with price. People will often pass up a good deal on something to buy the same or similar item at a higher price. If waygu sellers can continue to keep their prices high, which increases perception their product is superior, they will make higher profits. I'm sure there is a lot of study on the best price to sales ratio.

Trappers of wild fur need to do the same.

What I'm trying to figure out, is grass fed beef that has that kind of fat content!
I wonder why rabbits aren't fatter.
I tried some , not sure it was the real thing, but wasn't impressed at all.
Grass fed beef is very lean, also they move a lot to get the grass to eat.
Unless kept in a stall and fed chopped grasses, even then I have a hard time seeing that kind of fat content.
Fat beef are grain fed form my experience .
Also put in a stall to fatten up , at least a feed yard.
Ohama steaks are much the same selling explanation .

Marbling is more of a generic thing. You can probably put an Angus steer and waygu one on the same diet from birth and not have the same marbling on the Angus as you would the waygu. You can pump up the fat content on the outside of the meat with corn or other fat producing feed. You'll just never get intramuscular fat through feed.

To me angus always means black. The red cattle I was talking about are red white face. Herefords.

A 1300 pound steer on a high corn finishing ratio will have more marbling than he did at a 1000 pounds. So feed does increase intermuscler fat. The breeding does play a role in what the peak amount is. And the waygu is bred to have extremely high marbling.

It will definitely amplify what's there but it won't reach that level of marbling. It's a miracle those waygu cows can stand let alone move .

You can definitely get good marbling with grass fed, it just takes forever and some real good grass at the end. This pic is from a cow we butchered, plenty of marbling but she was 15 years old and fed well, came up open.

That's interesting, that's some awesome marbling , wonder if that's with all beef, if grown the same way.
Is the meat tender or tougher with that kind of age?
