It should work.
I'd highly reccomend you up grade the hooks on the gambrel to something a bit heavier. unless they are 1/4" or bigger (hard to tell in the picture) and I'd weld some rebar to the grips to get a wider better grip on the fur you'll tear them with the thin grip you got there. I'd weld in braces on the corners too them winches pull hard even on square tubing.
What's the bar going across the top for?

Also how much of pull do you have? You'll need close to 12' to turn a big coyote inside out.

I'd think with those few small adjustments it should work. If you don't have enough pull you'll just need to lower the critter down and get a second grip to finish the pull. I do deer on mine that way.
You're not planning to drive around with it on there are ya?

It will help you load your deer that is for sure...
I bet it will work... I might cut it in the middle and put a pipe inside it, so I could take it apart... besides that it should work fine......

Maybe devise a cover for the winch too to keep mud out if you're leaving it on there on the road. ???

Yeah, I was trying to think of something that would fit inside that square tubing real snug so I could weld it in there and do what you're talking about. Do you think a smaller square tubing would fit???

Smaller tubing would work fine, or use larger on the outside and put a place for a pen, so you could pen it a different heights...
A pipe might work better, that way you could make it swivel if you need it to load and unload stuff.....
