Smoked carp aren't bad at all. I've also had canned carp that were made into fish patties they were okay. I heard of people eating it the way you're talking about but haven't had it myself.

I've only done smoked for many years now. When I was a kid still at home I bow shot or speared lots carp every spring. Once my mom stuffed one I just gutted and scaled baked it in the oven. I don't recall that being to bad just a bit of work eating around the bones. Farmer I worked for in highschool. He would ask me to bring his wife a smaller under 10lb carp. She would fix it in what she called sweet and sour kind of a pickled jelly. It was good that way if you like the sweet and sour. I always ate some when offered, but wasn't in my favorite list. They always accepted a piece of smoke carp when I made it. Couple of the farmers that I trapped their land used to like a piece of smoked carp if I took them some. It seemed to me it was more the old timers that liked something made with carp. I guess now I'm the old timer I still smoke a few every year. I have family and neighbors that will ask for a piece of they know I'm smoking some. Most of the one I smoke now my son or I shoot with bow. I've thought about doing the canned carp. Last few years I caught enough salmon fishing with a buddy. I canned that instead.
I have thought about making carp sausage or snacks sticks. I've had the snack sticks made by a local fish market. I just need to figure out a recipe.

in the old days as we say carp was much more popular than it is now. i used to do a lot of fish fries for different events and scored carp was one of items we always did. not so much now. but lots of things have changed over the years. both good and bad. at one time the fish fries here might be several hundred lbs. not now. more like everyone wants "deli select"

sick Never could acquire a taste for them. Canned wasn't to bad
But growing up in wild brook trout country made me a picky eater

I am of the opinion that there is very little for bad game. Mostly just a lot of bad prep.

Cold water nearly any fish will have mild taste.

Post hook set or shot care has way more to do with taste.

We pickled a bunch of sucker a few years back.

Had bass this fall skin on, scaled,baked and fried. Both good.

Did a blind taste test trout and drum a few years ago, drum was actually preferred.


America only has one issue, we have a Responsibility crisis and everything else stems from it.

Years ago, when we raised mink, we used to fish for carp and ground them up for mink food mixed with other mink feed. They seemed to like it.
I have never personally cared for carp. The smoked carp I ever ate tasted like ham with a fishy taste. frown


The first bottles of Coca Cola contained 3.5 grams of cocaine. That's how our grandparents were able to walk to school uphill both ways in the snow.
