I watched a guy in Wi one time cleaning perch. He'd cut down the back on each side of the fin, just through the skin. He'd pull out that fin, then push a finger in under the skin on one side and his thumb on the other side and pull the whole carcass out of the skin, leaving the guts in the shell of skin. I'll see if I can find a you tube video of his method. It was pretty slick but I stick to filleting them one side then the other same as these bluegills and crappies..... I too don't care for the eggs.

I haven't seen perch prepared like that since the very early seventies. My maternal grandfather and uncle David used to fish Erie and butcher perch like that.
I thought All predators like eggs. Wish I'd learned from Grandma how to butterfly skin large trout. I was too busy being the big shot doing the catching.
