They have always cooked up with too strong of a fishy flavor to me, I have filled out the skillet with them a few times and they are not my favorite. Yelliw perch is my favorite fish to eat of all time though. I will give them another day in court sliced crossways like that. They are not bad, just very strong to me.

Taste like fish with a different texture. I keep all eggs when I clean fish. I pickled some walleye eggs once, but they are better fried.

Looks good to me. I've done similar with bluegill, catfish, and carp eggs.

I've eaten perch eggs (and bass, and burbot, and every other kind) and Iike them. I just fry them in butter; your breading them looks better.

I knew some older brothers who lived together, never married. They used to fry perch eggs and scrambled eggs together for breakfast.

Nothing like 40 thousand eggs to start the day. we eat them fried, raw or frozen here. mainly broad whitefish but other species too. A few people squeeze them into containers and freeze them in neat blocks.

Grew-up eating sucker eggs fried in bacon grease. Very rich! Since I was delegated the fish-cleaner Ma made sure that I didn’t nick an egg skein because the eggs would escape while frying, pop in the hot grease like popcorn, and burn her arms.

Those fish eggs, frozen like that, remind me of scrapple, pork grits or goetta, which are all made out of ground pork, plus a grain product. I wonder if adding a grain product to them would be good?

My chickens have told me they don't mind the flavor, they also said those are too small to be eggs.....
