I cook some deer roast straight from frozen in a sous vide. Not a quick process but you cant overcook with it unless you set the temp too high. Leave it to the French to figure it out.
Stop over cooking your meat! It isn’t gamey, it’s over cooked!

Marinate with a bit of Worcestershire, soy sauce, garlic powder, onion powder and pepper for a half hour or so. Grill on a screaming hot grill for 2 minutes a side and eat'em. WOW Do you even taste the venison? Gave a friend a few venison steaks , he took them home and a couple days later said his dog wouldn't eat it! Funny thing was I was eating some leftovers for lunch. Gave him a piece, and he said that was good! Same deer same steak , just how he prepared it! He told me he prepared it much like you described . I, really, do not care for the flavor of venison. I enjoy deer hunting and I ain't throwing it away. I hate liver also, along with most waterfowl. I love deer summer sausage and brats mixed with pork. Then again, I have 350# of prime Angus beef in the freezer, so I might be a bit spoiled.

Wrap bacon around meat. Fry med/high till looks like 2nd pic. Don’t over cook. It’s best rare to med rare. Bacon is actually optional. I usually just fry without it. This. Except I broil for 2.5 - 3 minutes each side....WITH BACON! I like to season with S, P, garlic powder and onion powder. Pre-cook the bacon for a few minutes prior to wrapping your tenderloin if you want your bacon crispy when your meat is done.

WOW Have any of you cooked anything on a stick over an open fire ? WOW The things you do to some of the best tasting meat is criminal! I mean, yeah while camping. But I also keep a small skillet while camping. Can’t beat a good wood fire cooked meal though. Over cooking meat or smothering with stuff so you can’t taste it should be criminal. But, this is America and folks can allegedly do as they wish. And the best tasting meat on a deer is the heart. Lol, fight me! Haha. I take it you don't like liver.

We cook it many ways, but quick and good is what we call deer bites. Cracker size slices 1/2” or so thick with cream cheese, pickled jalapenos, wrapped in bacon with toothpicks holding it together and grill until bacon is done. That's very similar to how we grill goose breast!

i made some deer, i kinda failed so i slapped it on two peices of bread and made me a barbecue deer burger. ima try it with croele seasoing tonight

Don't try to reinvent the wheel, start simple, basic grilled or pan cooked with salt pepper. Pay attention so not to over cook it, no more than medium, a little less is better, or it will taste like liver...once you get that down you can try other recipes..but at least you'll know what the actual meat tastes like.... Most important thing in cooking is paying attention. This is great advice imo.
