I hunted them years ago in Arkansas. I didn't care for the meat as in chops or steaks, thought they had a rather strong taste. But, we made some into some varieties of sausage that wasn't too bad.


My doctor suggested I start doing squats, so I moved all the beer to the bottom shelf of my fridge.

A wild hog has to hustle to survive, therefore they a re a lot leaner than the domestic stuff you buy at the store.

Smoked is good but if you make sausage you have to add fat or it will be so dry it will not hold together.

I would clean one to eat now since temps are good but when it is warm they all get tossed unless you can quickly remove and get on ice a 1/4, loin, etc.

And big boars all get tossed, not gambling my time and energy to have an end product that a buzzard might not touch.
And we have killed a good amount over the years, trapped, dogged and shot from 5# to over 300#

I shot 100's of them when I lived in Oklahoma. Ben Johnson the actor paid me 25.00 for everyone I shot. When he told me that, I told him you can't afford me. Anyway the first few big ones I shot I took home. And cooking them up they stunk. After that I only keep the 80 to 100 lbers. They were good and very tender and juicie. They had a good amount of fat on them for flavor.

The big ones look good in pictures, that's about it.

Apparently this new poison Texas is using on them turns the fat and meat blue? Have you heard anything about that? I'll be headed down your way in about a month. We hunt them down around nacogdoches. Sending two tons of corn down next week.

….. I’m a little south of Nacadoches and haven’t heard of the poison being used… they typically call in the dogs when there’s a problem…. Not saying it isn’t… just haven’t heard of anyone using it.

I can't find the original article that I read talking about the poison but there is a link in this forum to one. However it won't let me access it because I have ad blockers on my browser.

One video showed them baiting the feeder for a few weeks and the hogs got used to robbing corn from the feeder. But once they replaced the corn with Kaput, they shut down feeding. As I understand it, Kaput only has a fraction of the poison (Warfarin) that rat poison contains.

Not sure why, it wasn't due to any research on my end, but when it first came out I thought it was something you put out and boom, dead hogs. While there may be more recent studies, what I saw showed a pretty long process and issues with having them eat the poison. Didn't appear to be much of an issue with nontarget things. I have no idea how they would enforce you using specialty feeders, but if you do it is going to be an expensive process if you have a large area to deal with.

I have no doubt that some will figure out a way to blend the Warfarin (via rat poison) into something the hogs will more readily consume.

My experience has been a lot of factors in play with pigs. Here in SW Oklahoma, I have yet to have one that didn't cook up excellent . Even the big ones. Not the case in eastern Oklahoma . Awful.

I've never killed one, but I had a friend kill some in California and give me some of the meat. The chops were very good, but he had some of it ground into burger and that had an odor and a distinct taste. I found it odd it was only in the ground meat, but it could have been the cuts it came from. I still found it perfectly edible, but I'm sure some would have had issues with it.

Used to have a friend who always had a few hogs around he raised to butcher, his first hogs were ones he captured in California and had a lot of Russian in them, he kept breeding them, so his 'domestic' hogs were basically pen raised wild hogs. Of course they were fed rather than foraging on their own. They tasted good, but I never had a boar either.

5lbs to 400lbs

And for whatever reason, they've all been delicious.

Just a note that domestic boars all go to make sausage in pizza. I worked in a slaughter house that bought and butchered boars. You could smell them coming down the line. Are wild boars worse smelling?
