With the gumbo? Rice. People eat gumbo with potato salad? I pass. I like me a good amish mustard potato salad though. Lots of salt and pepper.

Tried making some 1st time this weekend. Turned out great.
I used a poblano and an Anaheim for my pepper, no bell pepper.
Chicken and sausage with okra and tomatoes.
Roux took 30 minutes to make, I wanted dark caramel color, not dark coffee.

My wife puts boiled eggs in potato salad. Also sweet relish. I had to quit eating potatoes but I like it.
