I’ve got quite a few favorites.

Coffee brewing
Black licorice
Sourdough bread toasted
Black cherry
Freshly plowed / turned dirt in spring
Burgers on the grill
Fresh, cleaned sheets
The ocean breeze
Fresh cut cedar
Lilacs in spring
Sunscreen in summer

Mild skunk odor because it takes me back to my schoolboy trapping days.

The smell of drying fur for the same reason.

Wet dogs, don't know why, I just like that smell.

Eh...wot?

The smell of a turf fire burning.
