That looks like a spike antler, and if so, he has some problems around the pedicel....looks to be a sore there.

Congrats! Y’all Yankees got some messed up tastebuds if y’all shoot bucks for meat. Does taste much better. Are y’all not allowed to shoot antlerless deer?
And yeah, there’s a huge taste difference in bucks and does.

tast is determined by a few things I think like how hard they are putting and been running and how fare they make it after the shot. The last 4 bucks the boys killed 3 were mild like doe the 4th was more of feed dinner to the dogs and we are going out to eat tonight and the rest of that one was made into jerky and sausage.

Well it depends..I've eaten a lot of both, can't say there's a significant difference, If I had my druthers I'd pick a doe over a rev'd up older rutting buck, but a lot of places up here don't have the deer population the south has so you take what you can get.
Biggest thing is to get the meat cooled quickly. I usually skin and bone immediately and get the meat on ice or hanging in meat bags if it's cold enough.

Last hour of the last day of general firearm season... didn't give it a second thought, boom .., had 1/2" of fat, maybe more, over the ribcage and HQ.

Have had old bucks that were fantastic and yearling does that weren't.

Not if you have a walkin cooler to hand the bucks in for a couple weeks

Maybe in the south there is,I've ate a lot of deer all shot in the north,and they all taste the same to me
