Finally got my starter perking along, so attempted my first bake yesterday...I actually got a loaf that looks like the pictures of how it's supposed to look!, lol

Needs a few tweaks but it worked as advertised... and it tastes like sourdough is supposed to. Can i be in the sourdough club now?..... grin grin

That does look good! I tried it many times but never could get it right. I'm better at making wine from a kit..

Sorry no pics, but it looked like one of yours, lol, just the grain is a little denser with fewer holes, but tender enough, and the crust was pretty hard, I think 5 less minutes baking will be good...just the one loaf,

Glad your first attempt turned out good. My first attempt was good but a little dense also. Baked my second loaf this week. [Linked Image]
The "ear" was a little extreme, looked more like a mohawk LOL. [Linked Image]
But it was lighter with holes throughout.

That looks pretty good...

You guys weigh out everything or go with measures?
I have a nephew that bakes it like a science project, and my SIL kind of wings it, lol , they both seem to come out ok,

I used bulk measurements and it seemed to work good enough, I think I just needed a little better rise and less baking time...

I bought a digital scale (under $15). Most all of my cooking I don't really measure stuff but baking bread was out of my wheelhouse and the scale takes the guesswork out of it.

I weighed out the initial measurements especially with the starter, once I saw what it looked like I've been replicating that with just a weigh check once in awhile.

I weigh
everything...salt ....water.. flour .. starter.

Then you can tweek your hydration

Looking good!!! I got a loaf ready this morning for a bake tomorrow morning 530AM.

I use a little a little rye flour and that puts the zip into its' zip.
