Sorry no pics, but it looked like one of yours, lol, just the grain is a little denser with fewer holes, but tender enough, and the crust was pretty hard, I think 5 less minutes baking will be good...just the one loaf, Half gone already...  Yup...it's a trial and error journey.

Glad your first attempt turned out good. My first attempt was good but a little dense also. I bought a digital scale (under $15). Most all of my cooking I don't really measure stuff but baking bread was out of my wheelhouse and the scale takes the guesswork out of it.

I weigh everything...salt ....water.. flour .. starter.
Then you can tweek your hydration

Looking good!!! I got a loaf ready this morning for a bake tomorrow morning 530AM.
I use a little a little rye flour and that puts the zip into its' zip.
