Looks great. I usually eat some of the long pinkish muscle from the hindquarters when I'm cutting them up. A little salt is my preferred seasoning. My friends think it's gross but that's OK more for me laugh

That looks good.

Raw meat and fish is good to eat as long as it's handled well. Cutting raw meat and fish properly, across the grain, keeps it tender.

The most exotic raw meat I've eaten is alpaca.

I used to have a hibachi charcoal grill and a stovepipe charcoal starter. I would put the iron grill on top of the stovepipe charcoal starter and it would get red hot. Marinated venison in olive oil and black pepper. Cooked it super fast and very rare with the hibachi grill on top of the stovepipe charcoal starter. Meat would catch on fire and sear quickly. Very juicy and flavorful.

Often cooked thick hamburger the same way.

Went to a fancy steakhouse with my wife and we had Venison Carpaccio, it changed how I looked at meat. For those who don't know it's raw venison and it was amazing.

Probably more parasites on a Tomato than in a piece of rare venison.

Ate raw hamburger as a kid when butchering a beef. Drank a lot of creek water too. Got worms a couple times. Dr said it was from running around barefoot alot. I like venison best when its not over cooked. Always cook hog meat pretty thorough. Probably dont matter much today but I dont like the taste. Same with partially raw chicken.

My wife won't eat any unless it's brown all the way through, ruined in my opinion.

My daughters share my culinary tastes. My oldest has had horse tartare in different contries and reindeer tartare in Russia. We all love sushi.

When I was a kid my parents belonged to a local gun club. The husbands would get together a couple of Saturdays a month to work on stuff in and around the club.

The wives formed a Women's Auxiliary and would fix meals for the men. A lot of it came from wild game and fish provided by the members.

One of their specialties was Cannibal Burgers; a raw burger patty on a bun with a slice of raw onion and topped with limburger cheese.

It was an acquired taste but I loved it.

The beef came from a local farmer and gun club member so we knew it was handled well.
