I keep all the beaver meat I can,, have done it for years,, but I’ve wondered if anyone has ever kept and ate beaver liver??
I’m personally not a fan of liver,, beef or chicken,,but my wife loves liver and onions… just wondering if anyone has done it and I can save some beaver liver for her

I know it's edible but I don't personally go for the organ meat in beaver since it's not that big and it's more trouble to open up a beavers organ cavity. If you bother to take the liver you can grab the heart as well though.

Yes, Friend told me about it and he cooked some and it was good.
First you have to like liver.
it was very mild and tender .
He cooked it in milk, I think it was called poached .
It was rather good.

I had a friend who ate lots of beaver and muskrat. He died young with a rare form of brain cancer. Not sure if its related.

I’ve heard that beaver liver is great. Never tried it though.

Eaten it several times, if you like live and onions you'll like it. I'm amazed at how large of a liver that bvr have.

I mean to be fair about Liver collection, most herbavors have way less accumulated than a predator will. If you're in an area that isn't particularly mercury heavy you'd most likely be no worse for wear. (Maybe avoid beaver liver from the great lakes though.)

Like everyone else here I have heard it’s very good. Good enough that a logger told my buddy - I will tell you where the beaver are if I get the livers!!

Why avoid them from the great lakes? What are they eating with more mercury in this area. Do the trees and lily pads have more mercury in them?

I would rather skin a skunk than eat liver from anything, it tastes tainted when fresh to me, like it was cooked in paint thinner.

In February, I used to get a strong hankering for beaver liver. I'm not much of a liver fan, but love beaver liver. Always got it friom pristine bush slkoughs with no mercury, etc. Best liver I ever had. I think a 30-lb beaver has a 40-lb liver

Depends on the environment the beaver are living in. If it's a heavy agriculture area, they are absorbing a lot of ag chemicals. Thats why muskrats aren't reproducing as they used to. Too many herbicides and pesticides in the water.
