We like to use wine in our cooking from time to time but it can be somewhat expensive if you only need 1 cup of wine for the dish and you don't drink wine, otherwise. After popping the cork, it needs to be used in a couple of weeks and, more often than not, it winds up getting dumped. Even a cheap bottle of wine is going to run $6-10. Sooo, I got to thinking. You can buy wine in a box/plastic bag, why couldn't I take my leftover wine and use my chamber vac to vacuum seal it. Well, about 2 months ago, I made a white wine sauce and chamber vacuumed the leftover wine. I just took the bags and stored them in my pantry cabinet. I broke out one of the bags last week and it was as good as when I cracked open the original bottle. This should help me save a bit of money and allow me to cook with wine a bit more frequently. I'm really liking this chamber vac!

I try to tell people that a chamber vac pays for its self. I seal water and freeze it for my ice chests Ive refrozen them up to 10 times and then I just quit counting lol.

I never thought about doing that, but box wine in a vacuum bag is big business here in France... maybe 30% of the market. Even better wine is sold in boxes. It comes in 3,5 and even 15 liter boxes and will be good after 2 to 3 weeks once opened.

Lol wine goes bad after you open it? Some wines worse than others, depending on sulfur content. I think i would just buy cooking sherry unless you really like a particular wine for your cooking. Vac sealers are godsends for leftover anything. Especially if you have sous vide cooker.

Lol wine goes bad after you open it? It oxidizes mon frère. Good to know! We aren’t huge wine drinkers, we will open a bottle once every 5 months or so. The bottle goes in the fridge and we will pour another glass months later. Maybe why I don’t like it!

I only use wine to pickle fish so I just buy a 4 pack of them little bottles and just one at a time but that's a good tip for folks who cook with wine.
My tip for frugal cooking is to buy meat in bigger pieces and break it down yourself. A whole boneless pork loin for example, can make thick or thin cut chops, sausage, ground pork, pulled pork, hand pounded breaded tenderloins (pork fritters), diced for soups, stews, etc... You can even make it into Canadian bacon, or other cured meats.

The bottles of cooking wine depending on where you buy them aren't much cheaper by the oz, actually can be more expensive. You can get wine for 5 bucks at Walmart. Cooking wine is 3-5 and you get about 25% less

I don't know how frugal it is that now I need a chamber vac
when I saw the title , I thought it was going to be about stock.
stock is extremely frugal
some make bone broth , but stock is a touch further yet , onion skins and ends , carrot peelings and ends , meat bones , chicken skin , pepper cores it can all go in the stock pot with water and cook into some very good and useful stuff.
and when you pull the solids from the stock , they can still go to the compost pile and break down very fast , other than the bones.
America only has one issue, we have a Responsibility crisis and everything else stems from it.

They make bottle pumps to keep it fresh. Just put it on the bottle and pump the air out. I have one of those. They work really great. We also buy boxed red blend wine and keep it in the refrigerator. It tastes fresh until you use it all up.
My doctor suggested I start doing squats, so I moved all the beer to the bottom shelf of my fridge.

You can even make it into Canadian bacon, or other cured meats. we can get those boneless pork loins for 1.50 a pound often , I get about 15 nice steaks from one making them around a buck a steak they are also great opened up , pounded out , seasoned and stuffed , then rolled and tied as a roast a half a loin makes a good roast for 5 people
