Fiskars Utility Knives are great for skinning with precision. I bet it would be great for taxedermists skinning out paws. I dont know what those blades are meant for but they work for beaver.

I use either the Weibe knife with replacement blades or a Dexter/Bolens beaver knife with the rounded end for many years. Good steel.
