I just bought a sous vide this week and made venison tenderloin. It's the most perfect I've ever done venison steak. It cooked it a perfect medium. It was tender and juicy. A very good friend of mine talked me into it. He had bought one a few weeks earlier and raved about this cooking method.


57 years trapping. It's who I am. Every day is still as exciting as it was when I was a kid but a little more work.

For beaver, the best result I have ever had was smoking the hams, and backstraps in foil pans at 250 with about half inch of braising liquid(apple juice and beef broth) until you get internal temp of 140. Then cover the pans with foil and crank the heat to 300 and continue till you get a temp of 160

I dont like to use eggs or milk while frying anything, I just like flour, salt, pepper, and any other spices. It comes out crispier and lighter.

Marinade or inject any game in Original Elegro Marinade, or the Hickory Smoked one. Its best for turkey and deer but works for everything.
