had some roast leftover so sliced it up small and the wife wanted enchiladas 
  so beef and cheese enchiladas and my son made his Spanish rice.
  nothing fancy I use enchilada sauce from a can , but they were very good

We never called pasta, pasta, it was always macaroni, and half my family is Italian....they all called it macaroni too....and pasta is the same no matter what shape it is, same 3 ingredients, flour, water and egg...lol Different shapes for different dishes.Alfredo goes over Fettuccini.You wouldnt make a Lazagna using elbow maccaroni.It wouldnt be Lazagna,,it would be Goulash.

But I'm not supposed to say anything when they butcher southern cooking    I never wreck any cooking.I can do it all.

I have a batch of cheap chicken thighs in the oven right now roasting in my big Dutch oven , when they are done I will pull them out and let cool till I get off work and I can pull them.
  then the flour butter and trinity will hit that big cast iron and it should be something resembling a chicken gumbo when I finish

Make it yourself ??? I've been on a clam Chowdah search. Had one at a local restaurant...tasted like potato soup...was awful. Might have to drive to the NH coast ..to get something good

Yup Upstate....I've made my own in the past...pretty tasty..
  But a ride to the coast is nice ..and should score there

Elbow macaroni cooked almost done, cooked ground beef, spaghetti sauce and shredded cheese. Combine the macaroni and ground beef with the spaghetti sauce to your liking in a skillet cover with shredded cheese and cover simmering until the cheese is melted. We call it skillet lasagna.
