We normally use a Waygu brisket corned beef but this time we ordered a Black Grade 1/2 round. The round is denser than brisket regardless of it being a mid-grade Waygu. The flavor was great but the wife likes the fatter/juicer brisket corned beef we normally use. When I came back from beaver trapping today around noon I made a sandwich with my homemade Ciabatta rolls and honey/japaleno mustard. Outstanding!

Thanks for that seldom, I meant to say butcher knife, not but her, anyhow I'm going with chef knife, I have a knife with a real similar blade and wasn't sure where it fit in it's a older knife with high carbon steel.
